Starting this weekend, sushi-lovers can now indulge earlier with the best meal of the day: brunch. Owners Derek and Lucas Gamlin have already been in on the Central West End brunch game with Gamlin Whiskey House, but are now expanding options for the neighborhood with some unique items you won’t be finding on any other brunch menus in town.

To start, there’s a sushi buffet—handcrafted by sushi chef Vu Hoang with the finest quality of fresh fish delivered daily—that includes a variety of sushi, nigiri, fruit, breads and seasonal items for $25 or added on to an entree for $12.

You don’t have to be in the mood for sushi to enjoy brunch at Sub Zero, though. There’s an expansive menu of innovative offerings from chef Jaime Gomez Ortiz separated into categories: featured, eggs, waffles & pancakes, sandwiches and salads. Here’s a look at a few of the dishes and drinks you’ll want to try.

The Carrot Cake Waffle was inspired by the Gamlin brothers’ great uncle’s recipe and is covered with cinnamon-maple cream cheese spread and whipped cream.

Last but not least, it wouldn’t be Sub Zero without the booze—it does have the largest selection of vodka in the country, after all. On the drink list from Gamlin’s corporate bar manager, Dustin Parres,  you’ll find a selection of champagne cocktails, bloody marys and screwdrivers available, with bottomless mimosas or bloody marys available for $25.

Denver Bloody Mary – spicy Bloody Mary, pickled jalapeño, onion, ham, hard-boiled quail egg

In addition to traditional mimosas, you can get the Green Machine (left), a tasty combination of grapefruit juice and Midori; or the Sunset with pomegranate float.
