Weber Grill Restaurant Heats Up the Saint Louis Galleria

“What’s more fun than making food on charcoal grill year-round?” asks executive chef Tim Eagan. Eagan and his crew are getting ready to fire up the grills to give you the flavors of outdoor grilling indoors with St. Louis’ first Weber Grill Restaurant.

It’s new home inside the Saint Louis Galleria will be the first location in Missouri. Set to open April 1, we sat down with chef Eagan to taste from the expansive menu and take in the chic space that formerly housed Black Finn Restaurant before its 2014 closure.

The restaurant cooks on massive, custom-made kettle grills in an open kitchen setting for dining guests to look onto the process. Everything—from the sauces to the kettle chips beside your burger—is prepared in-house

St. Louis is also the first in the nation to get a combination of the restaurant and Weber Grill Academy on site. The Academy is a haven for the foodie and grill enthusiasts to hone  grilling skills in classes taught by top culinary experts in a state-of-the-art facility.

The food is prepared on customized kettles in an open kitchen for guests to view.

Eagan, a St. Louis native who began working in the industry 19 years ago, got his start by working a hot dog stand he pushed around Laclede’s Landing that turned into a business venture. From there, he’s been on the local hotel scene, cooking in kitchens like the Hilton at the Ballpark when Three Sixty first came to town, and most recently served as the executive chef at DoubleTree by Hilton.

Grills indicate barbecue for many. While the menu does serve a selection of barbecues like pork and new-to-the-menu St. Louis-style ribs, Eagan notes the menu is not limited to barbecue. There’s seafood, burgers, steak and more. A few items cater to the non meat-eaters with vegetarian-friendly items like a grill-fired veggie pizza and Mediterranean salad.

Prime Kettle Burger – The "Summit" of burgers made with a secret blend of USDA Prime Black Angus Beef and Weber Seasonings topped with bourbon grilled onions and cabot sharp Vermont cheddar on a grill toasted ciabatta roll served with crispy pickles and garlic parmesan fries.

The expansive restaurant and academy space will also include an indoor and outdoor patio for guests. Weber Grill heats up the Galleria for lunch and dinner daily beginning April 1.
