Led by head chef Adam VanDonge, The White Linen in Topeka, Kansas, showcases what chefs can accomplish for the palate when submerged in the middle of America’s plethora of local produce and natural resources. It had been VanDonge’s lifelong dream to open up a fine-dining establishment of his own, and after securing an associate’s degree from the Culinary Arts School of The Art Institutes International and working his way through a number of gourmet restaurants, the dream became a reality.

The restaurant’s emphasis on seasonal items informs VanDonge’s monthly tasting menu. The eight-course May tasting menu showcases VanDonge’s versatile talent and predilection for exotic ingredients— the “Into the Wild” dish, for example: an elk entree made with truffles, black currant and hazelnut. The “Kraken” is also similar: an octopus dish made with tomatoes and capers. The lunch menu features dishes like the seared scallops, a creative take on the traditional entree made with parsnips, nutmeg and pine nuts. The restaurant even has a vegetarian tasting menu, with dishes like chilled corn soup made with puffed sorghum. It’s the perfect way to celebrate a special occasion or treat yourself to a creatively crafted meal.
