Sanctuaria Boasted As One Of America’s Best Bourbon Bars

St. Louisans should be happy to hear that Sanctuaria Wild Tapas has once again been named one of the hottest bourbon bars in the country by the Bourbon Review in partnership with Four Roses. The list included 60 bars from five regions—Bourbon Country, the Midwest, the Northeast, the South and the West—putting Sanctuaria alongside well-known institutions and industry up-and-comers alike.

Wil Pelly, corporate executive chef for In Good Company Group—owners of Sanctuaria, Cafe Ventana, Diablitos Cantina and Hendricks BBQ—shared his excitement about making the list. “It was kind of a shock,” says Pelly, who explained this was the second year in a row Sanctuaria has been recognized by the Bourbon Review.

“The criteria for the list was simple,” explains Justin Thompson of the Bourbon Review in a press release. “The bar needed to prominently display bourbon, educate patrons about bourbon and provide a superior selection. The winning bars also have a reputation for creating both unique and traditional bourbon cocktails.”

“It’s not that we have millions of bourbons,” explains Pelly. “It’s what we do with them.”

For example, one of Sanctuaria’s newest cocktails created by bar manager Matt Seiter and Pelly is the fall-inspired, “Eve’s Apple.” The cocktail is a warm, buttered bourbon spiced with cinnamon, clove and nutmeg served inside a hollowed-out, candied apple that patrons get to snack on once the drink is finished.
