On Tap: The Dark Room Welcomes New Full-Time Sommelier, Schlafly Releases Imperial Topaz IPA

Dec. 26: Schlafly Beer is celebrating its 23rd anniversary today with a special release of Imperial Topaz IPA. The concept comes from Schlafly Brewmaster, James “Otto” Ottolini, who stated in a release that the brew has a “light amber color, has a bold but elegant citrus flavor and delicious aroma.” The Topaz hop was discovered by the brewery on the island of Tasmania, Australia—which is found in the Tasmanian IPA as well. There will be parties all day at both Schlafly locations with 1991 beer prices and live music. Dec. 30: Denise Mueller, a hospitality industry veteran and wine educator, is making her way to Grand Center as The Dark Room’s new full-time sommelier. Wine enthusiasts can expect to see Mueller’s extensive restaurant experience—from area hotspots like The Wine Tap and Robust Wine Bars—at the bar from Tuesday-Saturday. As a co-founder and instructor at the Mid-American School of Wine, guests can find Mueller working alongside the staff of The Dark Room to get the Grand Center wine bar and photo gallery spot introduced, educated and excited about wine with new innovations and programs in 2015.
