Inside Look At One Of America's Best Brunches: Q&A With Bixby's Executive Chef Greg Ziegenfuss

We had the chance to chat with Greg Ziegenfuss, the executive chef of both Bixby’s and the long-standing local catering company Butler’s Pantry, about the latest culinary accolade to hit St. Louis. The restaurant reservation and review website OpenTable named Bixby’s one of America’s best brunch spots for 2014. The annual list is compiled from the millions of reviews that are posted about restaurants hailing from all corners of the country.

ALIVE: What is it that makes Bixby’s such a brunch hot spot?
Greg Ziegenfuss: Well first off, it’s the location. It’s on the second floor of the Missouri History Museum and the one side is floor to ceiling windows. So you have these wonderful views of Forest Park. Second off, we have a fantastic culinary team and we put our minds together for great seasonal menus that change every Sunday.  In short, the food is great, the view is great and we have excellent service.

ALIVE: What are some of the most popular brunch items?
GT: On every Sunday along with the brunch buffet we offer both a meat and vegetarian version of eggs Benedict, fresh waffles with two different sauces, made-to-order omelets and seasonal variations of bread pudding. Best part is, you can order all of those, none of those or even ten of those plates if you really wanted in addition to what’s available on the buffet. We always have a red meat, usually tenderloin, along with chicken and a seasonal pasta featuring local ingredients. The edible garnishes are almost always sourced locally and they change to complement the dish and to highlight what’s available and in season.

ALIVE: One of the best parts about brunch is the cocktails. Does Bixby’s offer anything special?
GT: Oh absolutely! We have a full bar and make a great bloody mary along with seasonal specialty cocktails, like our blood orange margarita. Every guest also gets a glass of champagne.

Bixby’s brunch is offered on Sunday from 10am to 2pm. Lunch is available during Monday through Saturday from 11am to 2pm along with express options offered on Tuesday from 10am to 6:30pm and Wednesday through Monday from 10am to 4:30pm. 5700 Lindell Blvd., Forest Park, 314.361.7313.
