If the notion of figs brings to mind grandma’s holiday puddings or Fig Newtons, you’re missing out. From sweet california figs to the flavorful Adriatic fig and the thick-skinned Kadota, this fabulous fruit comes in all different shapes, sizes and flavors. Figs are known for their luxuriously sweet and chewy texture; they also happen to be low in calories, rich in antioxidants and dietary fiber, and an excellent source of potassium. Prosciutto Wrapped Figs (Sandra Lee, foodnetwork.com)

1. Quarter the figs, cut a small hole in the center of each piece and fill with goat cheese.

2. take a slice of prosciutto and diagonally wrap it around the fig.

3. drizzle honey and pumpkin pie spice over each fig, place in the oven and roast for 10 minutes.
